  • 2 cups finely chopped peeled cucumber and seeded
  • 1/2 cup of tomato without seeds cut into small pieces
  • 1/4 cup red onion, minced
  • 2 tablespoons minced fresh parsley
  • 1 chili pepper of your choice (arbol, etc.) seeded and minced
  • 4-1 / 2 teaspoon chopped fresh coriander
  • 1 garlic clove minced
  • 1/4 cup Greek yogurt (you can also use cottage cheese / ricotta)
  • 1-1 / 2 teaspoon lemon juice
  • 1-1 / 2 teaspoon lime juice
  • 1/4 teaspoon sea salt
