How to prepare a rice with beans?

Preparation time: 90 minutes

  • 200g of broad beans or kidney beans
  • 175g peppers
  • 500g tomatoes
  • 4 cloves of garlic
  • 2 bunches of garlic
  • 1 sweet potato
  • Olive oil
  • Salt
  • 1 tablespoon of sweet paprika
  • 200g of Brillante Sabroz, which is an exclusive variety of round rice that absorbs all the flavor like Bomba rice and is always just right.

We prepare all the ingredients to make this recipe for rice with beans.

The first thing we will do is put them to soak the night before preparing the dish. We let the broad beans rehydrate from one day to the next before cooking.

We put the already hydrated beans in a casserole and cook them until they are tender, about 1 hour and a half until they are ready. We can also use an express pot, in this case, we must cook the beans for 8 or 10 minutes and open the pot.

While the beans are cooking we prepare the rest of the ingredients. In a saucepan we heat a drizzle of olive oil. Add the garlic, green pepper and garlic cloves, chopped. Sauté, remove the casserole from the heat and add the sweet paprika.

We stir well and put the pan back on the fire. Add the peeled and chopped tomato and cook until the vegetables are ready, about 20 minutes over medium heat.

At this point we will have the beans ready. We remove them from the casserole and, in the same water, cook the peeled and chopped sweet potato for 20 minutes. Then, in a casserole, put the beans, the vegetables that we have fried, the cooked sweet potato and the rice. Cover with water from the cooking of the beans and the sweet potato.
